PUMPKIN PASTA & HAPPY HALLOWEEN!!

"PASTA CON LA ZUCCA"




Ingredients: (for 2 portions)
  • 200 gr short pasta
  • 1 big pumpkin slice
  • 1 onion
  • grated pecorino cheese (or parmesan)
  • white dry wine
  • olive oil
  • black pepper

Preparation:

Cook pata in salted water as directed.
In a frying pan, add a thin layer of olive oil and the chopped onion,
cook for a couple of minutes then add the pumpkin chopped in small slices.
Cook for another few minutes then add a drop of white wine (not too much) and keep cooking as long as it takes to get a soft - creamy consistence.
You can help it smashing the pumpkin with a fork.
Drain the pasta very "al dente" and drop it in the frying pan with the pumpki sauce ad saute for a few minutes.
Remove the pan from fire and add 2 big fistful of grated cheese (it will give some salty flavor to the sweet pumkin cream), some black pepper and stir.
Serve it hot!
