Ingredients: (for 2 portions)
- 200 gr of rice-barley-emmer mix (in alternative you can use just rice)
- 1 small onion
- 1 radicchio head
- white dry wine
- parmesan cheese
- olive oil
- pink pepper
Preparation:
Cook the cereal mix in abundant salted water as directed.
In the meanwhile put a thin layer of olive oil in a frying pan, add the chopped onion and saute a few minutes.
Add the chopped radicchio leaves and stir, cook a few minutes until brown then sprinkle with white wine.
Cook 10 minutes then drop in the pan the drained rice mix, saute a few minutes, add 2 big fistful of grated parmesan cheese and stir.
Serve with a pinch of pink pepper.
